Dans ce manoir du 18e si\u00e8cle officie le chef Maximilien Bridier dont la cuisine <em>\u00ab exprime toute la sinc\u00e9rit\u00e9 du terroir \u00bb,<\/em> indique le restaurant sur son site web.<em> \u00ab Aussi, il n\u2019est pas rare de voir appara\u00eetre \u00e0 la carte l\u2019asperge de Touraine au printemps et la truffe noire en hiver. Seule exception sur une carte qui bat au rythme des saisons, le homard et le ris de veau restent incontournables. Le chef Maximilien Bridier travaille les produits selon son inspiration en respectant les codes de la gastronomie fran\u00e7aise. \u00bb<\/em> Les fours Rational mis en place sont synonymes de gain de temps et d\u2019\u00e9conomies d\u2019\u00e9nergie. La sauteuse polyvalente et <em>\u00ab intelligente\u00a0\u00bb<\/em> est un outil de pr\u00e9cision. La cuisson du pain (qui est p\u00e9tri et fa\u00e7onn\u00e9 sur place) b\u00e9n\u00e9ficie d\u2019un four d\u00e9di\u00e9.
